In southern Italy the term 'zita' refers to the bride, in fact this format is traditionally associated with weddings as an indispensable dish for wedding banquets. According to tradition, the zita, which is characterized by an important thickness and roughness, is broken by hand into irregular pieces before it is put in a saucepan to cook.
